BEST Paleo Coconut shrimp

Last night i made the yummiest dish...coconut shrimp!!!  My husband said it was the BEST thing i had ever cooked! It has been hotter than Hades here lately and i felt like cooking but not wanting to be next to a hot stove for an hour or more so i decided to cook shrimp!  It was the perfect dish for a warm night! My hubby and i started doing the Paleo diet and so far i am loving it; I feel better when i stick to it!  I am not fully doing it as much as i should but lets face it I'm a horrible dieter! Plus i LOVE pizza!  Without further adieu, here ya go! 

i like to get all my ingredients measured and laid out before i start cooking, its the most time consuming but so much easier in the end!

Whisk 2 eggs
measure out unsweetened coconut flakes


Cook shrimp in coconut oil 3-5 mins each side!

TADA! the end result!!


Paleo Cocount shrimp Recipe
1 pound of shrimp or 12 large prawns. (i bought de-veined and peeled shrimp already :))
1 cup unsweetened coconut flakes
1/2 cup gluten, wheat and dairy free flour (I found this at Whole foods)
 1/4 tsp salt
2 eggs
1/4 – 1 cup organic virgin coconut oil for frying(Whole Foods again)
De-vein and peel shrimp (if you don't buy them like that already), leave tails on. Combine coconut in a bowl with flour and salt. If the coconut flakes are fairly large, consider throwing them in the food processor for a minute for a smoother texture ( i left mine big as i LOVE coconut). Whisk eggs in a separate bowl. Dip shrimp in egg then the coconut mixture so each shrimp is well covered. Starting with 1/4 cup, heat the coconut oil in a pan. Drop a pinch of coconut into the pat – if it sizzles, oil is hot enough. Make sure oil is hot!  Fry the shrimp in batches until the outside is browned, about 3-5 minutes/side. If the oil becomes dark and/or starts to smoke, clean out the pan and start with fresh oil. Best when served immediately.  i bought some non-Paleo friendly sweet and spicy sauce from whole foods that was DELISH with the shrimp!  

We will definitely be having more of this.  it was a hit even with our 3 year old!!!

  2. Paleo diet is basically the Cave man diet. You can't have breads or grains its fruits, veggies and meat. i feel so great when i am doing it 100$ percent. you have to be creative when you cook so it doesn't get boring. i noticed a HUGE difference after doing it for a week.
